Russell got called out to work, my homework is done, workout isn't for 30 minutes and ya, I'm bored! So I thought I'd post the recipe I made for dinner tonight (Jenny you wanted this one too)! I hadn't made it since last fall, it's such a fall meal to me but Russell got called out before it was done so I ate alone...
Roasted Tomato Basil Soup
(I've altered the recipe some, this is my version)
1.5 lbs ripe roma tomatoes
1/8 cup plus 1 Tb olive oil
1/2 tsp kosher salt
3/4 tsp ground black pepper
1 cup yellow onion
3 cloves garlic, minced
1 Tb low fat margarine (I use light Smart Balance)
1/8 tsp red pepper flakes
14 oz canne tomatoes with the juice
2 cups fresh basil leaves (I use 1 standard size package)
1/2 tsp thyme leaves
2 cups chicken stock
Preheat oven to 400 degrees
Toss together tomatoes, 1/8 cup oil, salt and pepper. Spread tomatoes in 1 layer on a baking sheet and roast for 45 minutes.
In an 8-quart stockpot over medium heat, saute onions and garlic with 1 tablespoon olive oil, the butter and red pepper flakes for ten minutes (until onions start to brown). Add the canned tomatoes, basil, thyme and chicken stock. Add the oven-roasted tomatoes, including liquid on the baking sheet. Bring to a boil and simmer uncovered for 40 minutes. Pass through a food mill or food processor with the coarsest blade. Taste for seasonings and eat up!
Ps. This makes enough to feed us at least twice, but keep in mind....we are light eaters!
