Jo's Bridal Shower


So I'm posting a ton today...but Russell's playing basketball and I dont feel like working out since I already got ready for the day. Why didn't I work out first? Well, many reasons. We played games at the Stewart's last night and when we got home I thought I might need to do some prep for the bridal shower I was throwing the next day. When I looked at the dessert I was planning to make I realized it took 5 hours! There was no way I could do it before the shower. So my wonderful husband and I stayed up until 2 making it, then I set my alarm for an hour and a half later to do the final step. Needless to say, it was well worth it! So again I couldn't work out this morning because I got up early to do touch up cleaning and make the rest of the food. For those of you who don't know or need a brain refresher...JoAnna was my freshman & sophomore roommate! We were pretty inseparable. I think Jo, Ali and I did everything together and I wouldn't have had it any other way. They are two of the best girls I've ever met! Janae lived with us both years too and we really got to know her sophomore year. That was honestly the best apartment I've ever lived in (well next to mine now, gotta love my hubby). We laughed, we cried, we made messes, we fought, we partied and we made ever lasting friendships! So now that I'm being super sentimental...Jo is getting married on June 6th! I'm so happy and excited for her and Robert-they are adorable and I can't wait to see them all dressed up! Here are some pics from the shower....

~Poppyseed Pasta Salad~
Jo wanted recipes so sorry if you others dont want to read this
-Bow Tie Pasta (yes I know that's not what's pictured but the store was out!)
-Berries (fresh is best)
-Poppyseed Dressing (I think Kraft's is the best but I actually use Maple Grove Farms because it's Fat Free.
-As far as quantity goes I really just eyeball it based off how many I'm serving-



~Cranberry Toss Salad~

-2 Bags Romaine Lettuce
-2 Cups Mozzarella Cheese
-1 Cup Craisins
-2-3 Cans Light Mandarin Oranges

~Dressing~

-1/2 Cup Red Wine Vinegar
-3 Tbsp Red Onion
-1 Cup Sugar
-2 Tsp Dry Mustard
-1 1/2 Tsp Salt
-2 Tsp Poppyseeds
-1 Cup Vegetable Oil (I use Canola)

This is probably my favorite salad! You have more dressing than you actually need (I dont put it all on). And put less than you think it needs, after sitting for a little bit it tends to get watery.



~Strawberry Pretzel Squares~

So I wanted to take pictures of this in all the different stages last night but the camera was dead! And then I didn't make it in a clear pan so you can't see how cool it looks! Darn it!

-2 Cups finely crushed pretzels
-1/2 cup sugar divided
-2/3 cup butter or margarine melted (I used less, I hate butter)
-1 1/2 pkg. Fat Free Cream Cheese
-2 Tbsp. Fat Free Milk
-1 Cup Fat Free Cool Whip
-2 Cups boiling water
1 pkg (serves 8) Jell-O Brand Strawberry
-1 1/2 cups cold water
-4 cups sliced strawberries

Preheat oven to 350. Mix pretzel crumbs, 1/4 c sugar and melted butter.
Press into bottom of a 9 x 13in pan and bake for 10 minutes.
Let Cool.

Beat cream cheese, remaining 1/4 c sugar and milk until smooth. Gently mix in cool whip. Spread over crust and refrigerate.

Stir boiling water into gelatin mix for at least 2 min, then add cold water. Refrigerate for 1.5 hours. Add strawberry and spoon over cream cheese layer. Refrigerate at least 3 hours (mine stayed in much longer).

Cut into squares to serve

-I quart Fat Free Lime Sherbet
-2 Liter Fat Free, Caffeine Free Lemon Lime Soda

Our Last Day in Denver



Our last day in Denver was pretty chill. Slept in, went to Qdoba for lunch (their Mango Chicken Salad is back for the summer!) and headed for the airport! Not a single part of me wanted to come back to Provo. Partly because I hated my new job with a passion...but good news! I interviewed for a different job on Friday and got it! Better environment, better people (I get to work with Ashley) and better pay! Lets hope this one works out!

Denver Day 3

Today we trecked to Garden of the Gods. We had never heard of this place but it was beautiful!!! In the middle of the mountains are these massive red rocks. The dogs even joined us on our hike and surprisingly made it through the heat!

Such a pretty view...this is on the nice paved trails where people were everywhere! So we decided to hike on the unpaved trails for some peace and quiet!

GUESSTURES

After turkey burgers and corn on the cob we played Guesstures. Doug and Hailey have this theory that if you can't win in guesstures or at least get points then you must be a bad couple. So, for the record: We tied Doug and Hailey 2-2...we then switched teams and played boys vs. girls and of course the girls won!!

After the game I think we went shopping. All the days are getting mixed in my head. But I'm pretty sure we went to Saks Off Fifth Avenue! Gotta love their outlet. I got some Sevens shorts and A Pockets! Love 'em! We had take out Chinese/Thai for dinner...delicious!
Later that night this is how we found Chanel! Apparently she loves my coach shoes as much as I do! (Russell thinks she just liked the stinky shoe smell)

Denver Day 1

Ok ok, my parents have been dying to see pictures of our trip to Denver to see Doug & Hailey! I decided to break it up into days since we have a lot of pictures...except we didn't take a ton of pics on some days. Anyway.....


So we flew in Thursday night way late because our flight was delayed. We got back to their house after midnight and stayed up talking til about 2 AM! The worst part: Doug & Hailey had to get up a few hours later for work. Russell and I slept in and just relaxed as we watched What Not To Wear & 10 Years Younger! I snapped some shots of their house; we loved how they had decorated it.

After working a half day, Doug & Hailey came home and we went to lunch at Proto's! MMM MMM one of the best pizza's I have ever had! The sauce was honey BBQ chipotle...amazing! We paroozed downtown and bought tickets for the Rockies Game the following day.
Meet Sherman! This is before dinner at La Sandia...too bad Sherman and Chanel stayed home. After dinner we went and saw What Happens in Vegas.


This movie was GREAT! We all loved it! It had the funny and the romantic side to please all!
I'm pretty sure after the movie the boys played X Box til about 2AM...I dont think we ever went to bed before then! More tomorrow....

Dental School



Russell has finished his dental school applications and turned them in....We had a hard time deciding on schools and I kept pushing it back because I needed more time to think. Applications were sent to 16 different schools and we are praying we get accpeted to one! It was a pretty nerve racking time for me...haha not to mention Russell! We appreciate all the support we've received from family and friends and we ask for your continual prayers! LOVE YOU ALL!

Fun in the Sun

After a long week of working it was finally the weekend! I went to lunch with Kris on Saturday at Zupas mmm mm(forgot my camera tho)!! After soccer and cleaning the house we hung out with Jordan & Hailey who came down from Logan. We had an interesting time at Trafalga...but it was still fun!





After batting cages and go karts we went to Jamba! Yum!

Our other adventure this weekend was to Bridal Veil Falls!

After getting there we decided to hike to the top....

Russell didn't tell me about the trail til we made it to the top! We hiked right up the face of the waterfall!



It was a beautiful day! And Ps. We decided to take the trail back down!
